Healthy Snacks... Don't Mind if I Do!

I have always been more of a grazer than a strictly 3 big meals per day kind of girl. I eat smaller meals and love my snacks. You may or may not agree, but it works for me and I love preparing healthy and yummy nibbles so that I am not always reaching for the chocolate (way too easy to do).

I believe that making good choices for your health each day is a way to respect and love your life. It is easy to do when you take it a day at a time and prepare healthy snacks rather than fill your cupboard with junk food. Choose to eat food that is beneficial to your wellbeing and you will notice the difference!

I enjoy combining my love of good food with cooking. One of my favourite snacks are these yummy, rustic honey and almond spice cookies that I often whip up when I need a little something sweet but full of goodness with my cuppa. I took the recipe from here, but adapted it a little for my liking. Hope you like it too:


2 cups almond meal (or LSA)
Handful of roughly chopped pistachios... plus a few extra for sprinkling on top (optional)*
1 1/2 tbs apple pie spice, or 1 tsp cinnamon, 1/2 tsp nutmeg & a pinch of cloves
1/2 tsp salt
1/2 cup honey
1 large egg
1/2 tsp vanilla essence


Heat oven to 160 degrees (celsius) and line a cookie / baking tray with baking paper. 

Combine all dry ingredients. Add the wet ingredients and combine well, until mixture has formed a large ball. Using a dessert spoon, scoop the mixture onto the tray, about 1 inch in size. Flatten with the spoon to about 1/4 inch thickness. Sprinkle a few extra pistachios* on top (optional).

Bake for 12 minutes, or until cookies are slightly brown on bottom.

*TIP: Use chia seeds instead of pistachios for a boost of super food goodness!
