Breakfast: My Favourite Meal of the Day

Mornings haven't always been my forte. You can imagine why, having suffered anxiety, depression and an eating disorder. For the first 5 seconds upon waking, my intentions were good. Then a cloud of negative thoughts would rest over my morning like a thick smog. Deciding what to eat for breakfast was a drama, at best.

The principal I live by now, when it comes to brekkie is that, it better be good because it sets me up for the rest of my day. I keep it simple and often have two small meals in the morning. Being a mum brings a whole new level of spontaneity as to when and where I will eat my brekkie, but I never miss it - my favourite meal of the day.

This morning I made myself a breakfast smoothie, followed later by a salted boiled egg. I love adding a green twist to my smoothies - not just a touch of fresh mint, but also a handful of baby spinach leaves. You can't even taste the spinach nor can you feel the texture of it - as it blends beautifully. Spinach is a super food and a wonderful supply of iron, antioxidants and vitamins (especially vitamin K and A). Blueberries are also a super food - full of antioxidants amongst other beneficial goodies... so what better way to start your day than with a blueberry and spinach smoothie:


Ingredients

1 cup coconut or regular milk (or half of each)
1/2 cup fresh or frozen blueberries
1/2 cup frozen mixed berries
1/4 cup ice cubes
handful baby spinach leaves (washed)
small handful fresh mint leaves (washed)
A squeeze of honey (optional)

Method

Place all ingredients in a blender or food processor and blend till smooth. Add more ice if you want a frappe style smoothie.

Serve in a tall glass (or jar) and enjoy!
