Healthy Pizza

Sometimes I just feel like digging into a yummy pizza, not the greasy kind you get delivered late at night, perhaps when you have a hang-over... the gourmet kind. In fact, I like to make my own.

All it requires is some wholemeal lavish bread (flat bread) and your favourite toppings, or perhaps I could persuade you with one of mine - broccoli. I have mentioned this green delight before and while it may not be in your top 5, I think you will really like it here... This pizza disguises it nicely, leaving you wanting more:


Wholemeal flat bread
Chicken breast cooked and seasoned (or you can use a BBQ chicken)
1 handful of broccoli roughly chopped
Small handful of mushrooms, roughly chopped
Small handful of leek
Small handful of brown or red onion finely sliced
1 handful of fetta roughly crumbled
1 tbs LSA to sprinkle
Salt and pepper 
Chilli flakes (optional)
Olive oil


Drizzle some olive oil on a large flat oven or pizza tray. Put your flat bread on the tray and drizzle some more oil on top. Place your chicken, broccoli, mushrooms, leek and onion evenly on the bread. Top with the fetta and another dash of oil. Then sprinkle your LSA on top. Finally, season with some salt and pepper (I also like to add some chilli flakes).

Place in the oven for around 10-15 minutes, or until the bread goes golden brown on the edges. Cut up into slices and serve, or keep all to yourself (I can eat a whole one for lunch).

TIP: Add, subtract whatever toppings you like to create your favourite taste sensation. But please do try the broccoli! It is so good for you and tastes wonderful lightly cooked on a pizza with all these great flavours.
