Who likes broccoli? It is one of those vegetables, even though it promises health benefits when eaten, it doesn't always go down smooth. Being full of nutrients including vitamin C, vitamin A, folic acid, calcium and fiber, broccoli is recommended as a must-have by health organisations. This has become my go-to salad. I created it one day, whilst craving a wholesome dose of greens. Everyone I have made it for loves it... I hope you do too. It contains fresh, raw broccoli chopped up really small and disguised with other yummy ingredients plus a dressing to die for. No compromise on taste for health here:
1/2 head butter or oak lettuce, roughly chopped
2 cups fresh broccoli, roughly chopped (or finely chopped - the smaller the easier to eat if you don't fancy the taste so much)
1/2 avocado, cubed
1/2 cup leek, finely chopped
1/2 cup roasted almonds, roughly chopped
1 tbs LSA or chia seeds (to sprinkle on top)
2 1/2 tbs lemon olive oil (olive oil infused with lemon) OR 1 tbs olive oil and 1 tbs fresh lemon juice
2 tbs whole egg mayonnaise
Toss all the salad ingredients in a bowl (bar LSA or chia seeds). Whisk dressing together and drizzle over salad. Season with a pinch of salt and pepper.
Serve with a sprinkle of LSA or chia seeds. Serves 4.
TIP: Add chicken to this salad for a whole meal.
